Bread

You KNOW I don't follow recipes, or for that matter directions of any kind, very well so I won't tell the recipe for what might be the very best bread I've ever made. But the method is very easy. It's no-knead: make a very soggy loaf (~3 c flour, 1/4 t yeast, salt, 1 5/8 c liquid); let it sit for 18-24 hrs covered with plastic wrap; turn bubbly dough onto floured board and fold it over a couple of times; dump back into bowl to let rest for 2 hrs. Here's the trick: 20-30 min before you are ready to cook, preheat oven and pot with tight lid to 450 degrees. Slide dough into hot pot, bake for 30 min covered and another 15-30 uncovered. What comes out is a crispy crusty French-like bread with no fuss. Amazing.
